Soft polenta, recipe follows

4 ribs celery, coarsely chopped

1 bunch parsley stems

2 pounds apples, cored and cut into 6 slices each

1 cup polenta or cornmeal

1 1/2 pound veal breast

2 onions, coarsely chopped

1 cup red wine

Salt and pepper

2 tablespoons extra-virgin olive oil

3 1/2 pounds chicken wings, backs, and bones

3 carrots, coarsely chopped

1/2 cup all-purpose flour

2 tablespoons tomato paste

1 tablespoon black peppercorns

2 tablespoons salt

1/2 cup stracchino cheese, cut into cubes

4 cups water

1/2 teaspoon cinnamon

1 quart chicken stock, recipe follows

1/4 cup extra-virgin olive oil
