Ingredients for 4 servings

4 Honey Crisp apples

1 bottle dry Riesling

1 quart apple cider

Ginger, thumb sized, peeled and sliced

1 sprig rosemary

1 bay leaf

2 cinnamon sticks

4 cloves

4 star anise

Juice of 1 lemon

8 ounces honey

1 teaspoon fennel seed

1 vanilla bean, split

1 teaspoon salt

Preparation

1.

Peel apples, saving the peel

2.

Place apples and peels along with all other ingredients into a large, heavy-bottomed pot

3.

Bring up to a simmer over low heat. Place parchment circle on top of sauce to ensure no film layer develops

4.

Simmer very gently for 45 minutes. Remove apples with a slotted spoon and place on cooling rack over baking sheet

5.

Strain poaching liquid in strainer over bowl, pressing through fine mesh strainer to ensure all liquid is preserved

6.

Pour liquid back into pot and reduce down at a low simmer for 15 to 30 minutes or until 1 cup volume remains
