I can't recommend this enough. This is the third time I've made it and it's amazing. It was a huge hit with everyone we had over. I've tried marinating it for 1 day and three days. Three days makes a huge difference. If you can plan ahead, I say it's worth it.

Ingredients

For the marinade (Nobu-style Saikyo Miso):

1/4 cup sake

1/4 cup mirin

4 tablespoons white miso paste

3 tablespoons sugar

For the fish:

4 black cod fillets, about 1/2 pound (230 g) each

Nobu-style Saikyo Miso (see above)
