  • 1/4 cup Marsala wine
  • 1 large apple
  • 1 large orange
  • 1 cup no-salt-added chicken stock or broth
  • 1/4 tsp salt
  • 1 tsp olive oil
  • 4 ozs shiitake, cremini, portobello or ordinary white mushrooms
  • 8 ozs whole onion or 7 ozs chopped ready-cut onion (1 2/3 cups)
  • 10 ozs salmon fillet
  • Freshly ground black pepper to taste
  • 1 lemon
  • 1/2 cup bulgur
