2 cloves garlic

The enchiladas:

8 cloves garlic, pressed

4 teaspoons crushed coriander seed

2 teaspoons dried basil, crushed

1 teaspoon dried oregano, crushed

1 1/2 teaspoons kosher salt + more to taste and for sprinkling meat

4 pounds pork butt, cut into 1/2-inch steaks
