Ingredients

1 cup FOR THE GREEN GODDESS DIP --- flat leaf parsley leaves

1 cup packed watercress, washed

2 tbsp tarragon leaves

3 tbsp chives, minced

1 clove garlic, chopped

2 x salt packed anchovies, rinsed and bones removed

1/2 cup grapeseed oil

zest and juice of 1 lemon

1 tablespoon plus 1 teaspoon champagne vinegar

1 cup Mayonnaise

1 cup Sour Cream, lite works fine in this instance

Kosher salt and freshly ground black pepper, to taste

1 x FOR THE CRUDITE --- small jicama, about 5 ounces

1 x medium cucumber, peel on

12 ounces Carrots

5 ounces Yellow Squash

6 1/2 ounces Zucchini

1 x medium daikon, about 12 ounces

1 pint Cherry Tomatoes, preferably heirloom
