3 tablespoons Dijon mustard

2 tablespoons white wine vinegar

1/3 cup extra virgin olive oil (EVOO), plus some for drizzling

Salt and freshly ground black pepper

4 ribs celery from the heart, finely chopped

1/2 red onion, finely chopped

2 roasted red peppers, chopped

1 small jar marinated mushrooms, drained (4 ounces)

1/2 cup flat leaf parsley, chopped (a couple of handfuls)
