I did not have any thyme on hand so I used sliced garlic instead. I placed the slices in the slits of the eggplant and it turned out great! This recipe caused the eggplant to be absolutely perfectly cooked! I will definitely do this again.

8 fresh thyme sprigs

2 to 3 Tbs. extra-virgin olive oil

Lemon wedges or a vinaigrette for serving (optional)

2 lb. eggplant (about 2 globe or 4 Italian)
