2 (3.5-ounce) packages shirataki (yam noodles, available at Asian grocers)

1 1/2 pounds marbled sirloin, sliced thin enough to see through

2 cups sliced mushrooms (any kind)

6 ounces fresh spinach

2 cups napa cabbage, cut into 3 x3-inch pieces

2 bunches green onions, cut on the bias into 3-inch pieces

1 large onion, sliced

1 box firm tofu (about 350-400 grams), cut into 2-inch cubes

6 eggs in their shells (optional)

2 tablespoons olive oil, or a 2 x 2-inch chunk of suet (for better flavor)

Cooking broth (warishita)

1 cup low-sodium soy sauce

3/4 cup dashi

4 tablespoons mirin

2 tablespoons sugar
