2 to 3 thyme sprigs

1 bay leaf

1 clove garlic, crushed

6 whole black peppercorns

12 to 14 ounces pork tenderloin, trimmed of silver skin and excess fat

1/2 medium onion

1/2 red bell pepper, stemmed and seeded

1 tablespoon steeped coffee grounds

1/2 cup hot water

2 cups ketchup

1 teaspoon hot chili sauce, such as sambal oelek

1/2 teaspoon smoke flavoring, such as Liquid Smoke

1/4 cup dark brown sugar

1/4 cup cider vinegar

1/2 teaspoon garlic powder

Kosher salt

Freshly ground black pepper
