2 large male duck breasts

1 tbs coriander seeds

½ tsp black peppercorns

6 juniper berries

25 g Maldon sea salt

50 dark brown sugar

1 clove of garlic

1 tbs chopped fresh thyme

280 ml blood orange juice

20 ml balsamic vinegar

1.5g agar agar powder

200 g Medjool dates, stones removed

1 tb olive oil

Salt and freshly cracked black pepper

1 tsp sherry vinegar

300 g Jerusalem artichokes, peeled and sliced

20 g unsalted butter

50 ml double cream
