Ingredients for 4 servings

2 3/4 cups all-purpose flour, plus more for dusting

2 tablespoons olive oil

3 cups grated mozzarella

2 cups (about 1/2 pound) sliced fresh artichoke hearts

1 package active dry or fresh yeast

1 tablespoon chopped fresh thyme leaves

1 tablespoon grated Parmesan

1 cup sliced Roma tomatoes

2 tablespoons olive oil, plus more for brushing

1 teaspoon salt

3/4 cup warm water (105 to 115 degrees F)

2 cups (about 5 ounces) sliced eggplant

1 teaspoon honey or sugar

2 cups grated fontina

2 tablespoons sliced fresh basil leaves, for garnish
