  • 1 dozen thin slices baguette
  • Extra Virgin Olive Oil
  • 12 x thin slices smoked mozzarella
  • 6 halves (3 whole) Slow- roasted tomatoes (page 32), each half cut in half, at room temperature
  • 2 cup baby arugula
  • 1 tbsp highest-quality balsamic vinegar
  • Coarse salt
  • Freshly ground black Pepper
