4 whole chicken breasts, boneless and skinless

2 tablespoons light soy sauce

1 teaspoon sesame oil

1 teaspoon salt

1 tablespoon gin, vodka, or dry white wine

3 egg whites, beaten until frothy,

1 cup cornstarch

vegetable oil

1/4 cup granulated sugar

1/2 cup white vinegar

1 cup chicken stock or bouillion

1 tablespoon cornstarch + 2 tablespoons cold water

Juice of 1 lemon

zest of 1 lemon

3 small carrots, cut in thinnest possible strips (julienne)

1/2 large green pepper, cut in thinnest possible strips (julienne)

3 green onions, cut in thinnest possible strips (julienne)

1/2 cup crushed canned pineapple (optional)

1/2 oz lemon extract

1/4 head lettuce, iceberg or romaine or green leaf
