3 cups gluten-free flour [I used Pamela's Baking Mix]

1 teaspoon kosher salt

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 tablespoon cinnamon

1 cup sugar

1 cup packed brown sugar

1/4 cup vegetable oil

1/3 cup applesauce

3 large eggs

1/4 teaspoon almond extract

1 cup chopped walnuts – optional
