2 shallots, thinly sliced

1 tablespoon honey

1/2 tablespoon black peppercorns

1/4 cup fresh lime juice

6 tablespoons unsalted butter

Freshly ground pepper

1 1/2 pounds mixed mushrooms, such as creminis, oysters, and stemmed shiitakes, cut into 1/2-inch dice

1 tablespoon minced fresh ginger

2 tablespoons finely chopped chives


Four 1/2-inch-thick boneless sirloin steaks (about 6 ounces each)

2 tablespoons vegetable oil
