1/2 cup sugar

1/4 stick butter, cut into pieces

2 tablespoons bourbon

1/4 teaspoon cider vinegar

1/8 teaspoon fine sea salt

2 tablespoons heavy cream

About 8 cups canola oil, for frying, plus 1 tablespoon for the batter

1 large egg

1 cup sparkling apple cider, at room temperature

1 1/4 cup plus 1/2 cup all-purpose flour

1/4 teaspoon baking soda

Pinch ground cinnamon

1 pound Golden Delicious apples (2 or 3), peeled, cored and sliced into 1/4-inch thick rings

Confectioners' sugar, for dusting
