Couldn't find round zucchini locally, do used two fat traditional long ones, tripped out the center seeds to create a trough and poured te mixture over. Was still delicious and pretty when served!

This changed my opinion on simple squash dishes. The hot sauce and worcestershire sauce made this very flavorful. I used yellow squash instead of zucchini. Quite easy to prepare too.

Ingredients for 4 servings

4 round zucchini (or the traditional longer zucchini, small/medium) halved lengthwise and seeds scooped out

1 can fire roasted diced tomatoes, well drained

juice of 1 lemon

1 T lemon zest

1/3 cup fresh basil, chopped

1/3 cup feta cheese crumbles, plus extra for garnishing

1/4 teaspoon hot sauce

1 teaspoon worchershire sauce

olive oil

salt and pepper
