Ingredients for 6 servings

2 tablespoons olive oil

1/2 large onion, diced

1 pound ground turkey breast

2 cloves garlic, minced

1/2 green bell pepper, diced

2 large carrots, peeled and diced

2 stalks celery, rinsed and diced

1 15.25-oz can corn, drained

2 14.5-oz can diced tomatoes

2 16-oz cans beans (any beans you have will work! I used black beans and pinto beans)

1 can water

salt

pepper

1 tablespoon cumin

3/4 tablespoon chili powder

1/2 teaspoon cinnamon

1 large bay leaf

Optional toppings: chopped cilantro, grated cheddar cheese, lettuce, chopped tomatoes, lettuce, sour cream, avocado, lime wedges/lime juice, tortilla chips
