6 leaves fresh sage

FOR THE BURNT ORANGE SAUCE

1/2 bunch fresh thyme

1/2 bunch fresh basil

4 cups chicken stock or broth

1/2 bunch fresh oregano

1/2 tablespoon cold butter

FOR THE CHICKEN

salt

1 tablespoon pine nuts

3 scallions (blanched, cooled & chopped)

extra-virgin olive oil

FOR THE GREEN ONION POTATO PUREE
