  • 2 pork tenderloins, about 2 lbs total

  • 1 whole nutmeg
  • 1/2 cup Brandy and Spice Peach Preserves, recipe follows
  • 2 Tbsps olive oil
  • 2 tsps whole cloves
  • Peel from 1 lemon
  • 2 tsps whole allspice
  • 2 cinnamon sticks
  • 9 cups sugar
  • 1 3/4 tsps salt
  • 1/4 tsp freshly ground white pepper
  • 1 Tbsp dried oregano
  • 1 cup good-quality brandy
  • 1 Tbsp cayenne pepper
  • 3 lbs Idaho potatoes, peeled and cut into 1-inch pieces
  • 20 peaches, peeled, pitted and coarsely chopped
  • 1 Tbsp black pepper
  • 2 Tbsps garlic powder
  • 2 Tbsps whole juniper berries
  • 1 tsp black pepper
  • 2 Tbsps salt
  • 1/2 cup heavy cream
  • 1 Tbsp onion powder
