Ingredients

The Lentils

1 sprig fresh rosemary

1 sprig fresh thyme

1 bay leaf

1 cup French green lentils (see Note)

3 cups water

1 teaspoon kosher salt

The Dressing

4 tablespoons shallots

1/2 teaspoon Dijon mustard

3 tablespoons sherry wine vinegar

Salt and pepper to taste

5 tablespoons extra virgin olive oil

The Salad

1 head butter lettuce, torn into pieces, washed and spun dry

1 carrot, peeled and shredded

Pinch finely minced fresh thyme

Pinch finely minced fresh rosemary

1 tablespoon chopped fresh mint

2 tablespoons chopped Italian parsley

1 green onion, thinly sliced

4 ounces fresh goat cheese, crumbled or separated into small chunks
