1 ripe avocado (buy up to a week ahead of time if the avocados at the grocers are hard, so there is time to ripen to perfection)

1 head Bibb lettuce

1 medium ripe tomato

1-2 tsp. olive oil

2 oz. chunk of Parmesan or Asiago cheese, sliced very thin (or 2 TB. shreds, but we prefer slices or chunks for this recipe

freshly ground BLACK PEPPER to taste (we used our new SPECIAL EXTRA BOLD PEPPERCORNS)


2 TB. water

1/3 Cup fresh olive oil (your favorite variety)

1/3 Cup balsamic vinegar (good, strong stuff)
