Jen - Try Jessicas approach of light/heavy split. It's reduced in pan so other substitutions might not hold together. What about ricotta?

So delicious!!!! I will make this again and soon! I used 1/2 cup light cream and 1/2 cup heavy cream but other than that stuck to the recipe. I served it over polenta and it was just awesome:)

Ingredients for 4 servings

4 tillapia fillets

2 tablespoons unsalted butter

2 shallots, diced

1 cup fresh or frozen corn, divided, plus a little extra for garnish

3 tablespoons minced fresh tarragon, divided, plus more leaves for garnish

1 cup half and half

A few dashes Tabasco sauce

Salt and pepper to taste
