4 cinnamon sticks (or 2 long, broken in half)

1 2/3 cup of basmati rice

2 1/4 cups of boiling water

1 1/2 tablespoons of flat-leaf parsley leaves, finely chopped

1/2 cup of dill, finely chopped

1/4 cup of cilantro leaves, finely chopped

kosher salt and freshly ground black pepper

1/2 cup of Greek yogurt

2 tablespoons of olive oil
