Simple, with a super clean and refreshing flavor. It was perfect for a low-key summer get-together and went well with crackers and cheese. The recipe (which comes from Martha Stewart) calls for what seems like a lot of oil. I used about 2/3 of what is called for and it was kind of chunky. To get a smoother consistency, I would use all the oil or try to figure out something to help get a creamier consistency.

1/2 cup olive oil, plus more for drizzling

1 medium onion, coarsely chopped

4 small garlic cloves, coarsely chopped

2 cups chickpeas, rinsed and drained

1/3 cup fresh mint, coarsely chopped

1/4 cup fresh flat-leaf parsley, coarsely chopped

2 tablespoons plus 1 teaspoon fresh lemon juice

1 1/4 teaspoon coarse salt

fresh ground black pepper

warm pitas, bread or crackers
