150 g light brown sugar

2 tbs tamarind pulp

1 tsp Coleman

450 g malt vinegar

2 bay leaves

2 whole cloves

1 cinnamon stick

1 tsp cayenne pepper

Freshly cracked black pepper

1 clove of garlic

Freshly grated nutmeg, a pinch worth

50 g extra virgin olive oil

1 tsp black onion seeds

60 g Organic spelt flour

70 ml St.Peters Organic Ale + extra if the batter becomes too thick

1 large free range egg

1 tsp baking powder

Salt and freshly cracked black pepper

3 small courgettes

Spelt and Ale batter

Plain flour

Salt and freshly ground black pepper

Sunflower oil to shallow fry
