Ingredients

2 tbsp butter

1 small leek , (white and light green parts only), diced

1 onion , diced

1 stalk celery , diced

1 bay leaf

1 clove garlic , minced

half sweet red pepper , diced

1/4 tsp salt

1/4 tsp paprika

3 tbsp all-purpose flour

2 bottles (each 240 mL) clam juice

1 Yukon Gold potato , peeled, quartered and sliced 1/4 inch (5mm) thick

1-1/2 cups milk

12 oz cod or halibut fillets , cut into 1-inch (2.5 cm) chunks

2 tbsp chopped fresh parsley

3 strips bacon , (optional), cooked and crumbled
