This is an easy and delish dish.. But if looking to make a little skinnier (as I always am), instead of 1 T olive oil (120 calories), 1 teaspoon (40 calories) can do the job.. And you can use just 1 piece of toasted gluten free or Ezekiel Bread pulsed in processor with the lemon zest plus a teaspoon of garlic to boost flavor..

1 tablespoon extra-virgin olive oil

Coarse salt and ground black pepper

1 tablespoon unsalted butter

1/2 cup coarse breadcrumbs (from 2 slices whole-wheat bread pulsed in a food processor)

Grated zest of 1 lemon
