Ingredients for 4 servings

1 1/2 teaspoons grated fresh ginger

1/2 teaspoon crushed red pepper flakes (or to taste)

1 tablespoon chopped fresh garlic (or more to taste)

1 small red bell pepper , chopped

1/3 cup orzo pasta

1-2 large granny smith apples , peeled and coarsley chopped

4 cups chicken broth (can add in a little more broth if desired)

salt and pepper

1 large onion , chopped

1/4 cup dried currant

1 tablespoon curry powder (add in more if desired)

2 cups diced canned tomatoes (with juice)

2-4 tablespoons oil

6-8 boneless chicken breasts , cut into about 1-inch pieces (can use boneless skinless thighs)

plain yogurt
