  • 10 pieces of veal shank, about 3/4 lb each, tied
  • Salt and freshly ground pepper
  • All-purpose flour, for dusting
  • 1/4 cup extra-virgin olive oil
  • 6 medium carrots, cut into 1/4-inch dice
  • 4 celery ribs, cut into 1/4-inch dice
  • 2 large onions, cut into 1/4-inch dice
  • 1 1/2 cups dry white wine
  • 4 cups water
  • 1/4 cup tomato paste
