Ingredients for 4 servings

2 tbsp olive oil

2 x garlic cloves

1 x yellow onion, chopped

1 x leek, chopped

2 x celery branches, diced

3 x carrots, peeled and diced

1 x parsnip, peeled and diced

1 x fennel bulb, cut in pieces

1 x bay leaf

Bunch of fresh herbs (rosemary, thyme, parsley, according to taste)

1/4 tsp coriander seeds

1/4 tsp fennel seeds

1/8 tsp red peppercorns

8 cup cold water

Sea salt, to taste

1 x garlic clove

1 x red onion, sliced

1 x carrot, peeled and sliced

1 cup dry pasta, like penne — use rice pasta for a gluten free meal

4 x tomatoes, blanched, peeled, seeded and diced

1 can chickpeas (15 oz)

1/2 x escarole, cleaned and sliced coarsely

1.5 cup spinach leaves

1 x zucchini, sliced

2 x eggs, lightly beaten

Grated cheese, parmesan or pecorino

Fresh parsley, to serve

4 slices smoked salmon, diced

2 tbsp walnuts

1 x lemon zest finely grated

1 heaped cup flat parsley

1/3 cup grated pecorino

2 tbsp walnut oil
