2 slices of crustless white bread

1/4 cup pine nuts (1 1/2 ounces)

2 garlic cloves, coarsely chopped

2 tablespoons sherry vinegar

1 large shallot, coarsely chopped

1 1/4 cups blanched slivered almonds

1/2 medium seedless cucumber, peeled and coarsely chopped, plus 1/4 cup finely diced cucumber

1/3 cup extra-virgin olive oil
