Ingredients for 4 servings

2 T Low Fat Mayo or Reduced Fat Vegenaise

2 T jarred cocktail sauce (If you don’t have cocktail sauce, you can fake it by using 2 T ketchup mixed with 3 t prepared horseradish sauce.)

2 t Dijon Mustard

2 t fresh lemon juice

3-4 T freshly snipped chives

1 pint cherry or grape tomatoes, diced

3 Persian cucumbers, skin on, diced (Persian cukes have much less water than English or Garden Cukes and, as you can see, there is no reason to remove the seeds…they’re tiny and soft.)

1 shallot, minced

2 t good olive oil

1 T Seasoned Rice Wine Vinegar

1 large avocado, sliced into thin strips OR, if you want to reduce calories even more, roasted red bell pepper strips. (You can roast your own, making sure you peel them, or use the ones that come in a jar.)
