I used chicken breast instead of thighs, and warmed my tortillas on a griddle greased with olive oil spray instead of frying them. Delicious.

Ingredients for 4 servings

Creamy Tomatillo Sauce

1 lb. boneless, skinless chicken thighs (to yield about 2 cups shredded cooked meat)

4 oz.(1 cup) grated mozzarella

12 corn tortillas, 6 inches in diameter

1-1/3 oz. (1/3 cup) grated provolone

Salt to taste

Vegetable oil as needed
