8 frozen puff pastry shells, thawed (we tested with part of 2 Pepperidge Farm [10-ounce] packages)

1 large egg, lightly beaten

2 large eggs, lightly beaten

2 tablespoons butter

2 1/2 tablespoons all-purpose flour

1/2 cup whipping cream

Garnishes: fresh rosemary, flat-leaf parsley, and thyme
