1 (14-ounce) can hearts of palm, drained and cut on the bias into 1/4-inch thick slices

1 tablespoon plus 1 teaspoon Essence, recipe follows

1/4 cup plus 1 tablespoon masa harina

1 1/4 teaspoons salt

8 ounces baby spinach, tough stems removed, rinsed and patted dry

1/4 cup plus 1 tablespoon yellow cornmeal
