2 large vine-ripened tomatoes , peeled, seeded, finely diced

2 tablespoons basil leaves , shredded thinly

2 tablespoons olive oil

2 tablespoons lemon juice

1/4 cup mixed picked herbs (parsley, basil, tarragon)

1/2 teaspoon caster sugar

2 tablespoons toasted pine nuts

1/4 cup olive oil

1 1/2 cups couscous

salt and pepper

2 tablespoons red wine vinegar

1/2 teaspoon finely grated lemon zest

1 large brown onion, chopped

1 medium eggplant , cut into 1cm dice

2 tablespoons chopped parsley

3 zucchini , cut into 1cm dice

2 red capsicums , cut into 1cm dice

2 cups mixed salad greens

1 1/2 cups chicken stock or vegetable stock or water
