  • 2 loaves Italian bread (2 lbs), crusts removed and bread cut into 3/4-inch cubes (20 cups)
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 lbs sweet Italian sausage, casings removed
  • 2 large onions—1 finely chopped, 1 quartered
  • 1 large celery rib, finely diced
  • 3 large garlic cloves, very finely chopped
  • 1/4 cup finely chopped sage leaves
  • 4 Tbsps unsalted butter
  • 6 cups turkey stock or low-sodium chicken broth
  • Salt and freshly ground pepper
  • One 18- to 20-lb turkey, rinsed
  • 2 carrots, cut into 1-inch pieces
  • 3 cups water
  • 1/4 cup all-purpose flour
