2 medium baking potatoes, peeled and quartered

vegetable oil, to deep fry

2 medium onions, peeled and thinly sliced

2 x green chilies, stems removed

small handful cilantrocoriander leaves

4 x large cloves garlic, peeled

1 x dried small red chili, or 1/4 teaspoon red chili flakes (optional)

1 tsp salt, divided, plus more for boiling potatoes

2 x very ripe bananas, peeled

2/3 cup water

1 1/2 cup gram (chickpea) flour

2 tsp tamarind concentrate (available at many Indian stores and supermarkets)

1/2 tsp baking soda

1/2 tsp ground turmeric
