300.0g mixed mushrooms , halved if large

1.0 tsp fresh thyme leaves

3.0 tbsp olive oil

2 large onions , finely sliced

300 g grilled artichoke hearts, halved

500.0g pack ready-made shortcrust pastry

1 egg , a pinch of salt and 1 tbsp water, beaten together to glaze

142.0ml carton soured cream , to serve
