60.0g goose fat or 2 tbsp olive oil

1 large carrot

300.0g garlic sausages

40.0g dried breadcrumbs

6 garlic cloves

2 pinches of freshly ground black pepper

600.0g dried haricot beans , soaked overnight in 3 times their volume of water

2 ripe plum tomatoes

4 confit duck legs

140.0g smoked streaky bacon

2.0 tsp lemon juice

140.0g pork rind

a handful of fresh flatleaf parsley , coarsely chopped

8 pinches of sea salt

TO FINISH

1 small onion , preferably a white skinned mild one

1 celery stick

25.0g goose fat or 2 tbsp olive oil

1 garlic clove , finely chopped
