1 Medium sweet onion, diced

3 x ears of corn, roasted, kernels removed

1 Large Sweet Potato, peeled, diced

1 14oz can Muir Glen organic fire roasted diced tomatoes with green chilis, 14 oz

1 cup seeded, chopped fresh heirloom tomatoes- I used yellow and pink

4 oz green chilies, chopped, roasted

1 quart Vegetable Broth, light

1 can Coconut Milk, 14 oz

2 cup chicken breast, cut or torn into small pieces

sea salt and ground pepper to taste

organic, raw AgaveA quick drizzle of organic raw agave, to taste

3 tbsp fresh cilantro chopped

2 x fresh lime juice
