1 tablespoon grated gingerroot

2 carrots , sliced 1/4-inch thick

3 scallions, sliced

1/4 teaspoon salt

1 red bell pepper , stemmed, seeded and cut into 1/2 inch strips

1/4 teaspoon red pepper flakes

1 (14 ounce) package extra firm tofu , patted dry and cut into 3/4-inch cubes

3 garlic cloves , minced

1/2 cup vegetable broth

2 teaspoons curry powder or curry paste

3 tablespoons vegetable oil

1 large red onion or vidalia onion, halved and cut into bite size wedges

salt and pepper

12 ounces snow peas or sweet peas

1 teaspoon sugar

1 cup coconut milk
