Ingredients for 10 servings

1 cup dried tart cherry

1 cup slivered almond, toasted (see note below)

1 sponge cake, store-bought or sponge cake, homemade or butter pound cake, store-bought or butter pound cake, 9 x 5-inch homemade

1 lemon, juice of

2 cups raspberry jam

1/3 cup flour

3 bosc pears or anjou pears or bartlett pears

1/4 teaspoon salt

1 1/2 cups heavy cream

1 1/2 tablespoons confectioners' sugar

1 cup sherry wine or madeira wine or sweet marsala wine

1 teaspoon vanilla extract

3/4 cup granulated sugar

2 3/4 cups milk

For the Vanilla Custard (or use vanilla pudding or ready-made custard)

For the Whipped Cream

4 egg yolks, beaten

1/4 teaspoon ground nutmeg
