  • 1 (15 x 6 1/2 x 3/8-inch) alder wood grilling plank
  • 4 (6-oz) wild Alaskan salmon fillets
  • 1/2 tsp black pepper
  • 1/4 tsp kosher salt
  • 1 Tbsp butter
  • 1/3 cup chopped leek
  • 3 Tbsps chopped shallots
  • 1 cup seedless red grapes, quartered
  • 12 Castelvetrano olives, pitted and chopped
  • 4 tsps red wine vinegar
