Ingredients for 6 servings

1 lb cranberry beans

8 cups water

15 medium cloves of garlic, peeled and trimmed

2 x big shallots sliced on the axis into thin crescents

2-3 x dried smoked chiles

2 tsp plus fine sea salt for seasoning

1 small handful cilantro, chopped

couple handfuls salty hard cheese , parmesan, grated (I think my mystery cheese was actually Three Sisters Serena)
