2.0 tsp vegetable stock granules

3 cm piece fresh root ginger , grated

zest and juice 1 lemon

1.0 tsp each cinnamon , coriander, cumin and harissa paste

700.0g bottle tomato passata

50.0g dried cranberries

500 g pumpkin or squash, peeled, deseeded and cut into large chunks

3.0 tbsp olive oil

3.0 tbsp toasted flaked almonds

handful coriander , roughly chopped

400.0g can chickpeas , rinsed and drained

200.0g couscous

2 red onions , thickly sliced
