2 1/4 teaspoons (1 small packet) active dry yeast

3 1/4 cups flour, plus more for dusting the work surface

3/4 cup whole or 2-percent milk, at room temperature

4 tablespoons (1/2 stick) unsalted butter, at room temperature

3 large egg yolks

2 tablespoons plus 2 cups sugar

1 teaspoon salt

Canola oil, for greasing the proofing bowl and for frying

2 tablespoons ground cinnamon
