Ingredients for 4 servings

1 package extra-firm tofu, rinsed and pressed

1 tsp extra virgin olive oil

3 garlic cloves

2 cups diced sweet onion (about 1 medium)

1 cup diced potato (~115 grams or half a medium potato)

1.5 cups sliced crimini mushrooms (150 grams or about 9 mushrooms)

1/4 cup nutritional yeast

3-4 tbsp minced fresh basil

2 tbsp minced fresh parsley

1-1.5 tbsp fresh lemon juice

3/4 tsp kosher salt (or to taste) + black pepper

For garnish: chopped pineapple, salsa, Daiya cheese, green onion, Herbamareā€¦or whatever you like!
